Stuck at a certain weight

This is going to be a long one, but any help is appreciated.

For reference, I am 5’5, and 21F. I began my weight loss journey 2 years ago in January 2018 at 152 lbs. In about 3 months, I was able to drop 15 pounds, and weighed in at 137 lbs. During this time, I worked out 4-5 times a week by doing cardio and HIIT, tracked my calories and had a pretty restrictive diet of 1200 calories a day. For the remainder of 2018 and the majority of 2019, I was able to keep off the weight and fluctuated between 138-141 lbs without ever tracking my calories or restricting my diet. I still continued to workout consistently during this time, mainly because I enjoyed working out.

In December 2019, I ended up gaining 3 lbs, and weighing in at 142 lbs. This was due to me being home on for the holidays (that home cooked food will get ya) and not working out for 5 weeks. In January 2020, I decided that I NEEDED to lose those 3 lbs, so I spent pretty much all of January, February, and the beginning of March yo-yo dieting and fluctuating between losing the 3 lbs in a week and then gaining them back a week later. Finally quarantine hit, and I ended up gaining 3 more pounds even though I was running and walking 3.5-4 miles every day.

At the beginning of May, I decided I wanted to not only lose those extra 6 lbs, but also restart my fitness journey and try to lose 15-20 pounds. Within the first week, I dropped 3 pounds (back to 142 lbs), which I figured was just water weight. I did not track calories at all during that time, but I was doing HIIT + cardio again and really trying to focus on not snacking as much. 2 weeks ago, I decided I wanted to try getting an online personal trainer and nutrition coach, so I started a 2 week trial run with an app. The trainer told me to eat 1600 calories/day, 160 g of protein, 140 g of carbs, and 44 g of fats, do strength training 3 days of the week and cardio 2-3 days a week. I followed the macros pretty well, but found myself only being able to consume around 1300 calories because aside from working out, I live a relatively sedentary lifestyle and genuinely felt full from consuming only 1300 calories. After one day of following the program, I dropped 1 pound, but then for 3 days, I continued to weigh in at 141 lbs.

Since I “plateaued” (I know plateaus are meant to last weeks), I decided to try out another nutrition app (Noom) at the same time. Noom put me on a diet of 1200 calories/day, but did not give me any macros to follow, so I used the percentages my trainer had given me. After less than a week of using Noom, I was able to drop 2 more pounds and weigh in at 139 lbs. Unfortunately, this is where the progress halts. I’ve been stuck at 139 lbs for the past 5 days, and today, I even gained a little bit of weight.

I know weight loss is an up and down struggle, but I have no idea what to change to get past 139 lbs. I love working out and actually like what I am eating at 1200 calories. I don’t feel hungry or overly full, and never get bored of the meals I make. I also track my calories to a tee by using a food scale and weighing out all my food, and I know exactly how many calories I burn when working out because I have an apple watch. I also have a smart scale that tells me body fat % and other details of my body. Lastly, I sort of do intermittent fasting by eating only from 12pm - 9pm.

If you can’t tell by the post, I’m quite desperate and frustrated. I know I probably sound psycho and very obsessive, but I just feel so stuck. If you have ever been in this situation where you feel like your doing everything right, but are stuck, please let me know what helped!!

Notes

-When I work out, I usually burn anywhere from 400-500 calroies

-I drink green match tea every morning and 80-96 oz of water

-My life is VERY stress free right now (literally graduated college and am on break til I start my full time job)

-Get 7-8 hours of sleep a night

-25.3% body fat (according to smart scale, so not completely accurate)
