So frustrated and I need some advice

So I have had some major success in weigh loss, but it was purely due to diet and had nothing to do with me getting my lazy butt of the couch. I went from 255.8 on January 2nd to 208.8 on April 20th, I was able to do this with nothing but intermittent fasting and keto. I had enough and my wife's family had a big party and I really wanted to enjoy some of my favorite foods. I loved my weight loss, but man I look like melted ice cream, no muscle mass or tone just getting less fat, but still so soft.

I decided to drop keto and switch to CICO, and begin a 5x5 program 3 days a week. Told my self not to weigh in for 2 weeks as I know the day you get of Keto you can gain anywhere from 5-10 pounds of water weight alone. Lucky me, and my tracking, I weighed in about 2lbs down when I finally weighed my self, I can do this right?

Well May began and I started at my local crossfit gym, 3 days a week, so mixing crossfit with my weight lifting program I'm working out about 6 days a week. I also try to take my dogs on a mile or two walk one to twice a day if weather permits. I got an apple watch to help tie it into myfitnesspal, mfp states I'm burning roughly anywhere from 400-600 extra calories a day on work out days.

So tomorrow is my after pictures of 1 month, I also took measurements and weight. I figured I'm 100% okay with me staying in the 200's as long as my body looks good. But weighed in today at 207.6. That would be just a bit more then 1 pound lost over a whole entire month of exercise and eating well.

Now disclaimer I don't eat at 1700kcals every day, I some times go wild and get to the 1800s, and when I get really wild I'll climb to the 2000-2200 ( that was only once or twice in the whole month). I havent forced my self to eat anything wild but I have been enjoying bread again ect. Is there a really good diet guide I could follow to help me shred down to the look I want, or perhaps I'm eating too my kcals? I'm just a bit frustrated.
