Maintaining weight and plateauing

So during quarantine I lost 20 pounds (on purpose) and I was eating super healthy and was eating low calorie meal replacements and protein shakes (I was and currently still am in a weight loss program). I was doing great for a few months, but in the last 7 months or so I've been eating terribly. I'm finally getting back on track and I checked the scale, luckily I only gained about 5 pounds. I thought I had gained way more weight than that. So I was 170 lbs, dropped to 150 (lowest was 147 but no matter what I ate I couldn't get below that). Now I'm back at 155 and I started logging my calories again.

IDEALLY, I'd like to be 115 lbs but I don't know how feasible this would be. My health counselor says for me, I'd probably have to eat 900 calories a day to maintain that low of a weight (yikes).

On top of that, I feel like it's impossible for me to eat healthy and exercise regularly at the same time. After I gained the weight I went to Pilates a lot, but I was still eating like shit. During quarantine I was hardly exercising but eating really well.

What's a good way to maintain the weight? I don't want to just diet all the time. I need a lifestyle change that will stick and help me in the long run. And how do you get past plateauing? I'm a 5'2" female and 26 yrs old and right now I'm eating at or a little less than 1200 calories. Is reaching 115 lbs doable, and if it is would it be worth it to only eat 900 calories a day just to stay at that weight?
