I’m stuck

I’m 31F who is 5’3 and is currently 166 pounds. I have been trying to lose the same 15-20 pounds for what feels like my whole adult life. For some background, I have Crohn’s disease, Endometriosis and Lipedema in my legs. I have worked with registered dietitians, personal trainers, and done countless hours of research on weight loss. I have done long stretches of calorie and macro counting, adjusting up or down. I have found that the weight won’t budge unless I am eating 1200-1300 calories a day. However, eating in this deficit doesn’t give me the energy I need to do my weight lifting 3/4 times a week and my 10-15,000 steps a day. But if I go even a bit over this deficit, the weight won’t budge. Any ideas of what to try next? I am truly at a loss since I eat only whole foods, include fruits and veggies at every meal, and get plenty of protein. I allow myself two chai lattes a week and one meal in and one meal out. Other than that, everything else is cooked at home with non-ultra processed food.
