I think I've Plateaued... Need suggestions

Hello r/LoseIt folks! I've been dieting and working out since July 5th of this year. Trying to get in to better shape after seeing my weight get out of hand and a Doctors appointment that didn't go well, along with blood work that showed I had high cholesterol and blood sugars. So I made the decision to change and to start getting serious about my weight. I'm only in my early 30's and I want to be around for my wife for as long as I can be.

Now, that said, the first month of my diet I was eating extremely healthy, weighing and measuring and counting calories, keeping myself accountable. Within the first month I lost 20 pounds and was feeling great. I switched things up to try to eat more along the lines of the "Anabolic" diet that's pushed by folks like Greg Doucette and I find it to be easy and sustainable. I have no problem hitting my macros of 200g of protein, 90g fat, and 100 carbs while staying in a calorie deficit and coming in around 1600-1800 calories a day. I'm also drinking a lot of water, hitting over 6k steps per day, and being sure to hit my daily activity goals of at least 60 minutes. I love the food, the recipes and it feels more sustainable. I did that diet for a second month and lost about 12 pounds. When I entered my 3rd month, I figured I'd see a slow down, but not a grinding halt like I've seen. The good thing is I'm not going UP, I'm staying in place. For about 2 weeks now I've stayed at roughly the same week with a +/- of 2 pounds. I've been hovering right at 30 pounds total lost and the lowest I've dipped is to -33 lbs before going back up to -30.

I figured at some point that my body would do this, needing a moment to sort of "catch up" to the weight loss. But I'm just getting a bit discouraged that I'm hovering at the same weight for weeks now without any real noticeable changes in weight, BMI, or body fat %. I've been using a digital scale by Renpho that gives results of a "scan" done while weighing, but there's been no change in the data. I'm not seeing trends one way or another. A few days ago I was down about 2 pounds from where I'm at now, but then it went right back up to where it's been and hasn't budged. I try to weigh myself first thing in the mornings after using the bathroom and before eating or drinking anything to make sure I'm at my "lightest". After a week of this, I tried cutting out some of the big suspects I thought it could be. The minimal bread I eat, or the fat free cheese, but cutting that stuff out for two weeks showed no real results and my weight stayed the same. So... I think I've plateaued. Should I just keep going with what I'm doing and eventually my body will kick back in to gear and the weight will start falling off again? Or should I be looking at possibly needing to change up my diet?

What have you all done when you run in to this sort of thing?
