Help with figuring out why I gained weight?

Hi there! I am F22, 55.5kg, 168cm, TDEE 1500kcal, hoping to gain some insights as to why I could've gained weight. Thanks a lot for the help!

For two weeks, due to a medical condition surprising my appetite, I was eating around 300-500 kcal a day. My weight was around 53kg during that time.

Getting better from then, I had been hitting around 900-1200kcal daily, which is well within my TDEE, but my weight had gone up to around 55.5kg and my weight gain is noticeable.

Anybody has any thoughts as to why the weight gain? I thought it might've been something to do with water weight but it's been two weeks since I'd been eating 900-1200, the weight hasn't gone back down yet. Could it be that my weight of 53kg was due to water weight loss?

Just in case I could be under calculating my calories, showing what I ate today this is a rough idea of what I eat in a day -

Breakfast: nuggets x2 (110kcal), French fry x5 (50kcal), hams slices 6 (80kcal), ketchup 1 tbsp (20kcal) = 260kcal

Lunch: Cherry tomatoes x35 (105kcal), 2 medium carrots (50kcal), Mixed berries 1.5cup (105kcal), Honey .5 tbsp (35kcal) = 295kcal

Dinner: Chicken soup 1 cup (120kcal), Vegetable curry 2tbsp (80kcal), flatbread >1 piece (90kcal), muesli 55g (200kcal) =490kcal

Total: 1050 kcal
