A year ago, u/gougeresaufromage asked a very important question, as Raclette season will soon be upon us... again. While having the real deal is something that should not be skipped once in a while, the repetition of Raclette Saturdays will throw a spanner in anybody's weight loss journey.
I searched the answers that were then provided, and I am surprised that no one mentioned cancoillotte as the perfect alternative to raclette cheese. Raclette clocks at 3.4 kcal/g, while a rich cancoillotte is only 1.7 kcal/g (and some are even less than this), while still providing over 13% proteins. This cheese product has been well known and used by gym goers for decades in my neighborhood.
Cook those potatoes, and simply put some cancoillotte on top of them instead (various flavors are available: garlic, yellow wine, wild garlic, etc.). While you must not forget the pickles, please drop the charcuterie: no matter how tasty, It has no place in a Raclette.
