Would like some advice for starting my weight loss journey with physical limitations.

So I am a female 6 ft (183 cm) tall and 210 lb (95 kg). My goal weight is 150 lb (68 kg). I have 3 ruptured discs in my back which limit my physical activity. The only position I am truly comfortable is sitting with my feet reclined out therefore I have become very sedentary. So any help with exercise I could do without hurting myself would be excellent. As far as diet I eat very poorly. I am willing to change this though. I currently have no oven but I can use the stove top and slow cooker to cook. So any advice on how many calories I should be taking in since I have limited mobility would be much appreciated. I also wake up at 8 am and eat lunch at 11 am and supper at 5 pm. Is this considered intermittent fasting? Is it helpful to me at all? Thanks in advance for any help you can provide!
