Injuries, COVID-19, & Losing Weight with limited Hand Usage

Like many people on this sub, 2020 has been a difficult year for my (26F) weight. I got COVID-19 due to being deemed essential & while I never went to the hospital, I did spend almost 2 months in quarantine in a studio apartment as my partner & I both went through weeks of fatigue & symptoms in March & April. This resulted in several lbs of weight gain.

I was trying to get back on track when I was hit with intense daily hand pain that makes it difficult to do chores & perform my job on a daily basis. I met with an orthopedist & completed 6 weeks in the fall of physical therapy with some improvements towards pain, but I have been following up trying to receive a diagnosis ever since. In addition to monitoring calories, I also started working out 2x per week & walking 30-40 min per day yet I continued to gain weight. I also stopped receiving my period around this time.

Cut to today, I am swimming in doctors appointments & currently taking prednisone (unrelated to the hand pain) which has caused me to pack on more pounds. Recently, a specialist identified a VitaminD deficiency which I have been working towards correcting. Overall, I have gained over 30lbs over the last year.

I have had difficulty with workouts & cooking because cooking especially can be agonizing for my hands, and I need my hands for my job. I’ve considered trying to pick up pre-made meals regularly at the grocery store, however, I live in a largely anti-mask area so with my immune system suppressed on steroids, I have been struggling to manage the anxiety of getting COVID again & prefer to avoid indoor interactions as much as possible.

I am looking for advice on workouts, meals, anything weight loss related for those struggling with hand pain & a post COVID slump. I have recently struggled with a relapse on exercise & diet consistency alongside steroid usage which has resulted in my weight creeping up again.
