Plateau happening mid weightloss journey after losing 100lb. Still have to lose another 100lb

Female 24. Ive lost a little more than 100lb so far and I still need to lose another 100 to hit my goal weight. Realistically speaking its like 125lb.

I have been in a long plateau of almost 3-4 weeks now and its making me lose my mind. I have been measuring my body and there has been zero progress in losing inches too. So its not like im losing fat but not weight.

I currently eat 1750 calories and weight 291 as of today. Man once I hit the 290s my weight loss basically went to hell.

I track all my calories and use a scale for everything. I dont eat after 7pm. I dont drink alcohol. I focus on lower carbs and high protein with moderate fat. I dont do cheat meals or cheat days because I see it as ruining progress. I did have one cheat day for my birthday but immediately got back on track.

I workout 4 times a week with weights and cardio. Any session lasts about 1 hour.

I have been observing my progress through my journey many times to know its not "period" issues.

I do have pcos which could maybe play a part but I wouldn't know. I do know I retain water like crazy but I have been trying to take turmeric pills to help with the water weight and inflammation. But what confuses me is "how the hell did I lose 100lb if I hold water weight like this?"

SO idk. Any advise? Im not one to cut my calories lower than my current because Im already eating too low for my weight. I have been interested in reverse dieting but im terrified to gain weight. My mental health depends on losing weight. Ive notice myself wanting to quit the weight loss journey more than normal these past few weeks due to zero progress and rise in frustration.
